We’re exploring the world of natural wines, and our selections for September will take you on a tasting voyage to some of the most prominent wine regions in the world. Take in the notes of Burgundy, France by way of a delightful, bright white from Jean-Philippe Fichet, known for his fastidious and thoughtful winemaking. Venture over to Piemonte, Italy, to experience a red selection from Giacomo Borgogno that will astound you with it’s vibrant, complex characteristics. Crack ‘em open, and take a seat for a tasting trip to you won’t soon forget.

Jean-Philippe Fichet, Bourgogne Aligoté — 2022

The wines that Jean-Philippe Fichet is making today have few rivals for their class in Burgundy and they could be unmatched in their transparency and expressiveness.
Fichet’s methods reflect his philosophy: he is famously meticulous and abhors taking short cuts. His low yields, the foremost key to quality, are achieved through severe winter pruning rather than by green harvesting. Viticulture and vinification aim to capture terroir, delineation and minerality in the wines. Jean-Philippe aims to know his vines and to work with them to find a healthy equilibrium. He eschews chemical fertilizers, herbicides or pesticides. Grapes are all harvested by hand.

VARIETAL: Aligoté (mostly from the village of Meursault from a parcel planted in 1991)
AROMAS: Notes of white flowers, lemon verbena and green apple
MOUTH FEEL: Crisp and dry with flavors of lemon, pear, almond, chalky minerality and a long, refreshing finish
OVERALL: Lean, youthful character with high acidity and bright, fresh aromas
PAIRINGS: Grilled fish, oysters, Crottin de Chavignol goat's cheese

At Borgogno, keeping things simple is their history: just a few, very clear rules:
In all the vineyards they own, they use just organic fertilizers with no herbicides, and carry out only eco-friendly treatments. This is why their grapes leave zero residue; clean grapes are essential to make high-quality wines.
In 2016 they began the conversion that led to organic certification for the 2019 harvest.
Nature itself teaches us how important it is to give time to time, without haste. This is what they do, in their vineyards and with their wines, since 1761.

AROMAS: Fresh red cherry, strawberry, raspberry and spice hints on the nose
